   Why we do what we do   

Bread is absolutely scrumptious and well and truly ingrained in our society (no bun intended). Freshly baked bread is delightfully aromatic and the crunch of a loaf’s outer crust is enough to trigger happy memories of the past. Bread is everywhere. We buy pre-sliced loaves; slather butter on bagels, take big bites out of baguettes and post pics of croissants. They’re found in bakeries, airports, cafés, at home and even in our salads. 


Unfortunately, like most delicious things bread isn’t the most healthy thing we could be eating. The obesity epidemic is worsening and so are cases of diabetes. Bread is made mostly out of carbohydrates which turn into sugar in the body - and sugar is one of the main culprits of these diseases. 


The world is waking up to this fact. Low carbohydrate and ketogenic diets are becoming more common. But bread still remains tantalizingly delicious.
